This delicious blondie is a lighter version of a brownie. The fruit and nuts make it a terrific lunch box or after school snack.
What you need
125g butter, melted
1 cup caster sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1 1/4 cups plain flour
¾ teaspoon bicarbonate soda
½ teaspoon cinnamon
150g CADBURY Dark Chocolate Baking Chips
1 cup sultanas
½ cup dried cranberries
½ cup walnuts, coarsely chopped (optional)
- WHISK together the butter, sugar, eggs and vanilla. Stir in the sifted flour, bicarbonate soda and cinnamon. Fold in the chocolate, dried fruits and walnuts.
- SPOON the mixture into a greased and lined 28 × 18cm pan. Bake in a moderately slow oven 160°C for 50-60 minutes until just firm. Allow to cool completely in the pan before slicing. Store in an airtight container until required.
